This quick air fryer keto friendly chicken salad is a favorite of mine. It’s great for a light lunch with friends on the weekend and is a great left over for these quarantine times.
This simple recipe takes less than 40 minutes and is a very easy meal to make. You can add spices if you want and to make it spicy you could even add crushed peppers. For a little crunch add some sliced almonds if you like. Serve with your favorite dressing.

Keto Air Fryer Chicken Salad

Servings 4
Ingredients:
Olive Oil Spray
2 pounds boneless chicken tenders
Salt, Pepper, Garlic Powder
1/2 tsp paprika
1 packets sazon Goya (optional)
2 scallions
1 tsp ginger paste
1/2 tsp all spice
1/2 whole shredded cabbage
4 leaves sliced purple cabbage
2 shredded medium carrots
Almonds
Step 1 Season chicken with salt, pepper, garlic powder and paprika. Add sazon Goya packet which is optional but it adds so much flavor to food. Find it in the Spanish food section. Set aside for 30 minutes to an hour.
Step 2 Spray air fryer with olive oil. Arrange chicken in a single layer. Set air fryer at 360F for 25 minutes. I cooked mine for 20 minutes because they weren’t thick. Start time and pause every 5 minutes to turn the chicken. This ensures that the chicken doesn’t dry up.
Step 3 Meanwhile on a non stick pan spray olive oil, add scallions, ginger paste and allspice. Toss the cabbage and carrots in for 5 minutes. You could also skip this and mix the ingredients to eat them raw. I just like to cook the cabbage a little. I use this non stick pan and it’s so easy to clean. Non stick is great y’all.
Step 4 Remove chicken from air fryer. Let it rest for 5 minutes before cutting and serve with salad. Add sliced almonds and dressing of your choice.
